Velveeta Shortage? No Big Deal! 5 from scratch cheese sauce recipes for the Super Bowl

Have you heard? There’s a [processed] “cheesepocalypse” in our midst, the Velveeta shortage is real. No worries though, making from scratch queso and other creamy cheese sauces with your favorite fromage — cheddar, Monterey jack, Parm, blue, you name it! — is so, so easy. Here’re my five favorites, all gluten-free:

Chili’s Classic Nachos

Topped with beans, chorizo queso con carne, more cheese, and DIY pickled jalapeƱos then served with an assortment of dips, a platter of these Chili’s-inspired chips will surely disappear quickly!

Quick-n-Easy Stovetop Mac and Cheese

There’s no need to bake this mac and cheese. Simply boil your favorite gluten-free pasta and coat with a rich, better-than-from-a-box cheese sauce. Scale up quantities (and pot sizes) to make enough for a crowd!

Homemade Nacho Cheese Sauce and “Taco Seasoning” Spiced Beef

This is my go-to queso recipe to enjoy by the mugful with tortilla chips, but when used in combination with taco-seasoning-packet-free seasoned beef, tomatoes and chopped scallions you’ve got a tasty homemade take on Taco Bell’s Nachos Supreme.
